STOVE-TOP MULTI-GRAIN BREAD PUDDING

One of the most decadent ways of utilising left over bread is to churn it into a bread pudding. Traditional recipes call for using an oven for preparation. However, the same recipe can be easily made on stove top with a little bit of slow cooking in the dum-style way.

The choice of bread can be anything - white bread slices, multi-grain slices, ladi pav etc. Eggs are indispensable in this recipe and play the role of an emulsifier to bring the pudding together.

So here is how the recipe goes:

Prep Time: 5 minutes
Cook time: 60-75 minutes
Serves: 3-4

Ingredients:
  • 5-6 Multi-grain bread slices (regular sized slices not large)
  • 2½ cups Milk
  • 5 tbsp Sugar
  • ½ tsp Cinnamon powder
  • ¾ tsp Green cardamom powder
  • 2 Eggs
  • Dry fruits for garnishing
Method:
  1. Grease a 8" diameter skillet and keep aside.
  2. Heat milk in a cooking pot until it boils.
  3. Pull the milk off the stove once it's boiled and add sugar, cinnamon & cardamom powders to it. Mix well.
  4. Crumble the bread slices and add them to the milk-spices mixture while the milk is still hot. Mix vigorously to obtain smooth paste.
  5. Cool the bread mixture to room temperature.
  6. Beat the eggs and add them to the bread mixture. Mix well until smooth paste is obtained.
  7. Put the mixture in a greased skillet, spread evenly and garnish with dry fruits.
  8. Cover the skillet and place it on absolutely low flame.
  9. Cook for 30-40 minutes or until the pudding has set and a skewer run through its center comes out clean.
  10. Serve hot with whipped cream, vanilla ice cream or just a cup of tea/coffee.
  11. Refrigerate it if you wish to eat a chilled version of the pudding and relish it by dousing with simmering chocolate sauce.
