MY CHILLI-SOY-HONEY CHICKEN

This is an easy dish that makes an interesting addition to my lunch/dinner table whenever it is made. You just need to carry out a basic marination for the chicken, then shallow fry it and finish it off with a luscious Chilli-Soy-Honey sauce.

Here is the detailed recipe for your perusal:
Prep Time: Min. 4 hours for marination
Cook Time: 30-40 minutes
Serves: 2-3

Ingredients:
For marinating the chicken:
  • 250 gm Boneless chicken (1 inch cubes)
  • 2 tsp Ginger-garlic paste
  • ½ tsp Crushed black peppercorns
  • ½ tsp Dark soy sauce
  • 1 tbsp Fresh lemon juice
  • Salt to taste

For the Chilli-Soy-Honey sauce:
  • 2 tbsp Red chilli flakes
  • 3 tbsp Dark soy sauce
  • 4 tbsp Honey
  • 2 tbsp Brown sugar
  • 2 tbsp Vinegar
  • 1 tbsp Garlic powder
  • Salt to taste
  • 2 tbsp peanut butter (optional)

For frying the marinated chicken:
  • 1 tbsp Oil
  • 2 Crushed cloves (large) of garlic
  • 2 tbsp Chopped spring onion greens
  • 4 tbsp Chilli-soy-honey sauce

Method:
For marinating the chicken:
  1. Mix the chicken along with all ingredients specified.
  2. Refrigerate chicken in the marinade for minimum 4 hours.

For the Chilli-Soy-Honey sauce:
  1. Heat a sauce pan on medium flame and once it's hot add sugar to it and melt.
  2. Add chilli flakes, garlic powder once the sugar melts and mix well.
  3. Add dark soy sauce, peanut butter, salt to the sugar mixture and bring it to a boil. Then turn the flame to low and allow the mixture to simmer for 5 minutes.
  4. Add vinegar, honey to the mixture while still on low flame and cook for another 2 minutes before pulling off the stove.
(PS: After using the required amount of sauce for this dish you can refrigerate the remaining sauce post cooling it to room temperature for later use.)

For frying the marinated chicken:
  1. Heat oil in a pan on medium flame.
  2. Add crushed garlic to it and fry for 30 seconds.
  3. Add the chicken with the marinade juices and cook, occasionally stirring to cook it evenly on all sides for about 15 minutes or until almost done (but not fully done and needs another 3-5 minutes of cooking).
  4. Add Chilli-Soy-Honey sauce, spring onion greens and cook for last 3-5 minutes.
  5. Pull off the stove and serve hot as an appetizer or as a side dish with steamed/fried rice or even noodles.
