![]() On my recent trip to Dubai, I had relished Kunafa and had spoken about it on my Instagram. Kunafa is a popular Middle Eastern sweet delicacy consisting of distinct layers of cheese and semolina or vermicelli baked together and then soaked with sugar syrup for sweetening. The ingredients used and method of preparation make it a delicious sweet but one with a shelf life of merely a day. Therefore, I was saddened when I could not carry this delicious treat back with me to Mumbai. However, within a few days of my return to Mumbai my cravings for Kunafa had found a solution. Foodeementals, a sweet venture by Sufyan Qureshi and Zuber Barudgar in Mumbai is currently the only one home-delivering this rich, decadent treat to Mumbaikars. ![]() In the Kunafa dished out by Foodeementals, the base layer entails a mixture of cream and brined cheese, which is topped with kataifi or thread like vermicelli. The baking imparts a beautiful golden color and crispiness to the kataifi while the cheese mixture develops a velvety texture. Chopped pistachios are added as garnish to this arrangement. Saffron infused sugar syrup is separately packaged and sent with every order to be poured over the Kunafa just prior to eating it. Indulging in this sweet treat was a gratifying experience for my taste buds. While most of the Kunafa I had indulged in Dubai was made from either nabulsi cheese or mozzarella, it tended to be stringy whereas the one from Foodeementals had the most alluring silken texture owing to use of cream and cheese. Also, the consistency of the flavoured sugar syrup was apt enough to seep right through the crunchy and creamy layers of this dessert and imparting it with a very delightful sweetness.
