![]() I continue to mention time and again that I love eggs for breakfast. Nothing gives more contentment than a hearty egg dish for breakfast.Today, I am talking about scrambled eggs. I love them how my Parsi friends prepare it. The Parsi scrambled egg version is called Akuri. So, how does it vary from the usual scrambled eggs? It differs from the conventional scrambled eggs because of it use of spices. The eggs are cooked to a consistency that is soft but not undercooked. The spice additions include green chillies, chopped coriander, at times finely chopped tomatoes and a seasoning of pepper. This is generally eaten with pav though some prefer eating it with sliced bread as well. While travelling to Pune, I happened to eat the scrumptious AKURI ON TOAST preparation at the renowned German Bakery in the Koregaon Park area. Their version had a further twist to this egg dish. It incorporated cheese to the eggs and came on a toasted slice of bread. This dish had a play of textures owing to the cheese and egg combination that made it silky smooth but there was a crunch element due to placement on a bed of toast. I had a great time at German Bakery and thoroughly enjoyed the Akuri on Toast. Do try this out the next time you are in Pune and let me know how it was. Till then, HAPPY EATING…
