While coriander remained the dominant ingredient, other elements that added beautiful layers of flavor to this preparation included mustard seeds, peanuts, cardamom, cinnamon, urad dal (black gram) etc. Raita or savory yoghurt prepared with sweet shallots served as a perfect accompaniment with this mildly piquant rice.
