![]() It was #WorldMacaronDay yesterday & just an excuse for me to indulge in one of my favourite sugary treats, the macarons. So, lets find out what is so special about a macaron that makes it the talk of the town. Well, it is confection comprising of egg whites, sugar, powdered almonds and food colouring. The former two are ingredients that give rise to a meringue and hence the name macaron is the Italian term for meringue since this sweet delight is a meringue based dessert and finds its roots in Italy as long ago as 8th century. But, upon its advent on French soil in the 16th century the mixture of the three aforementioned ingredients was piped out as discs and two such discs were brought together after baking with a filling of jam or buttercream. That was the birth of the French macaron. So, this sweet delight that dates back to the 16th century has risen in popularity in India in the past half-decade or so with the arrival of chic dessert bars and patisseries. Nowadays, the base and the fillings for macarons are spiked with spices, herbs, liqueurs, chocolate, fruits and numerous ingredients to arrive at an assortment of different flavored macarons. This is exactly what transpired at Chef Sanjana Patel’s La Folie Patisserie& La Folie Lab for celebrating World Macaron Day on 20th March and Mumbaikars got a chance to indulge in some interesting flavoured macarons. Some of these were flavors created by Chef Patel herself while a few were created in collaboration with renowned chef’s and bloggers in India.
So, here's a list of 10 delicious Macarons from La Folie Lab that I indulged in on this occasion that were simply superlative. - Macaron No.1 AlokVerma 's Butter Pumpkin Spice was a melange of sweet pumpkin & warm spices - Macaron No.2 RushinaMunshaw-Ghildiyal’s 'sKadipattaTadka oozing with earthiness of curry leaves & pungency of red chillies - Macaron No.3 SaranshGoila 'sThandaiflavor with a punch of thandai masala invoked some great Holi memories - Macaron No.4 Shivesh 's Yuzu Cream Hazelnut was a burst of refreshing citrus with sublime nuttiness - Macaron No.5 Vanilla Crème Brulée was heavenly; just tasted like the original custard dessert. Loved it! - Macaron No.6 Chilli Chocolate was a fiery treat; flavor of chillies balanced off with chocolaty sweetness - Macaron No.7 AnkietGulabani's Miso Butterscotch with salty & buttery sugary profiles of miso & butterscotch respectively gradually begins its play on the taste buds leading to a beautiful melange of flavours that lingers on the palate long after you have finished devouring the macaron. - Macaron No.8 Black Sesame just ticked the right notes of the fading winter with toasty flavor of sesame - Macaron No.9 Cheetos just brought back memories of snack break in school - Macaron No.10 RushinaMunshaw-Ghildiyal’s 'sMasala Maggi was pure bliss with the characteristic masala notes that I just love.
